chrysanthemum panna cotta + goji berry syrup

for the panna cotta

makes approximately 3, idk i spilled a lot in the process

  • 1/2 cup oat milk

  • 1 cups heavy cream

  • 1 1/2 cup half n half

  • 1/3 cup granulated sugar

  • 3 tsp gelatin powder

  • 10 grams dried chrysanthemum flowers

  1. lightly grease ramekin with vegetable oil if you plan to unmold them, otherwise skip this step

  2. combine oat milk and half n half in a sauce pot, sprinkle gelatin over the mixture to let bloom

  3. continuously stir over medium low heat until gelatin is fully dissolved and steaming (do not boil)

  4. add heavy cream and sugar until fully dissolved, add chrysanthemum and let steep for 10 minutes

  5. strain and distribute between 3 molds and set overnight

  6. to remove from mold, dip the bottom of the ramekin in hot water for 1 minute and flip onto a serving plate

for the syrup

  • 1/3 cup water

  • 1 ish tbs goji berries

  • 2 chunks rock sugar

  1. heat ingredients in a pot until simmering and the rock sugar dissolves

  2. serve with panna cotta
