toasted white chocolate earl grey cookies

ingredients (adapted from claire saffitz’s chocolate chip cookies)

  • 2 sticks unsalted butter cut into tablespoons, room temp

  • 2 cups all-purpose flour

  • 1 tsp salt

  • 1 tsp baking soda

  • 3/4 cup brown sugar

  • 3/4 white granulated sugar

  • 2 large eggs

  • 1 tbs vanilla extract

  • 5 earl grey tea bags

  • 11 oz white chocolate chips

instructions

  1. preheat oven to 325ºF

  2. on two parchment lined baking sheets, spread out white chocolate chips and bake in oven for 7 - 8 minutes

  3. remove white chocolate chips and let cool on the side

  4. cream butter, white sugar, brown sugar, and vanilla until light and fluffy

  5. cut open tea bags and pour contents into butter

  6. beat in one egg at a time into butter

  7. in a separate bowl, mix flour, salt, baking soda

  8. fold flour mixture into butter in batches of 3 and add toasted white chocolate

  9. chill dough in fridge for 15 - 20 minutes

  10. remove dough from fridge and scoop 2 tbs per cookie, place onto lined baking sheet and chill for another 12 - 24 hours

  11. preheat the oven to 350ºF once you’re ready to bake the cookies and bake for 12 - 15 minutes. remove from oven, sprinkle flaky sea salt, and let cool
